Baked Beans in Offset Smoker

Baked Beans are made with a combination of smoked bacon, and vegetables, usually chopped up in a pot of water until the beans start to boil. Then the beans are stirred in a baking dish and baked until done. Most recipes call for some type of pork or beef drippings or fat to flavor the beans during cooking. In this recipe, we’re going to add a little smoke, bacon, and peppers for some great flavor.

Ingredients

  • 4 pounds of red or white beans (cannellini or kidney)
  • 1 tablespoon steak seasoning
  • 1tp teaspoon molasses
  • 1 tablespoon brown sugar
  • 2 teaspoons apple cider vinegar (or more) (optional)
  • 2 teaspoons Worcestershire sauce (or more) (optional)

The Perfect Smokey Taste

The smoke flavor of these beans is controlled by the type of wood you use to smoke them. We used hickory for a milder taste, but you can use any type of wood or even alder or mesquite.

Preparation For Smoked Baked Beans

Prepare the smoker according to the manufacturer’s instructions. In a large pot, bring 4 quarts of water to a boil over medium-high heat.

Add the beans and cook until tender (about 1 hour). Drain and set aside until cool enough to handle. Mix together all ingredients except for the Worcestershire sauce in a large bowl.

Add the cooled beans and stir well with a spoon until evenly combined with all ingredients.

Preheat your Offset Smoker

to 225°F (110°C).

To make the smoke, we used a combination of hickory and applewood, but you can use any type of wood or even alder or mesquite.

Cut up the bacon and cook in an oiled pan (we used our Pecan Smokehouse) on low heat until crispy.

Remove the bacon from the pan to drain on paper towels.

Place in a small bowl and add the Worcestershire sauce, molasses, steak seasoning, brown sugar, and apple cider vinegar. Mix well with your hands until evenly combined. Set aside.

Place the beans into a large pot or baking dish that has been sprayed with non-stick spray. Mix together all ingredients except for the Worcestershire sauce in a bowl; add to bean mixture and stir well with a spoon until evenly combined with all ingredients.

There are two types of beans we recommend for our recipe. The first is a red or white bean that is about 12 to 15 ounces. The second is a can or bucket of kidney beans, which are about 2 pounds.
