So let’s go through a few feature breakdowns. But just to look at the many features here that I’ve grown to love, the temperature regulation that you can control by way of a knob is great. If you want to increase or limit the amount of airflow. It’s a convenient way to do that. There’s a little door that opens less or more when you do that. And then also on the side, you have your temperature regulation where you can well airflow regulation, which will affect the temperature. So if you’re running too hot or not warm enough, you can play with it and figure out based upon the charcoal and the wood chips that you’re using, how much airflow you need to make that temperature optimal.

And one thing I do like about this is it did come with, a thermometer built-in. And it’s really nice because it’s got from the 200 to 275 range, which typically I smoke around between 225 and 250 because it is a low and slow process. But that’s really nice having that there so you can monitor your temperature. Something else that’s cool.

I like how the legs on this, they’re just legs. They’re not wheels. Because if you’ve dealt with other grills that come with wheels, you’ve probably found that it’s not something that’s optimal to roll around a lot. And if you do, you’ve probably found that it’s something that the wheels become damaged and or completely inoperable in a short period of time. But it’s got a handle. So if you do need to move it around your patio, it’s not something I would recommend moving around a lot, although it’s well made. But if you did need to move it around, it’s easy for one person to grab that side and one person to grab the other side. It’s a convenient thing that they incorporated into this.

And you can put a bunch of racks in here. You’ve got, 12345, six Racks. And you can change the placement of these to however you need it to be. There’s a cutout between the main smoker area and the heat source. A little hole in it. This funnels all of the juices down through the bottom. And there is a little pan that was included that you can pull out and dump at the end of your smoking session to get all the juices out because when you smoke, obviously there’s going to be juices and sauces and they’re going to drip down in there.

I just use an aluminum-type pan and fill it up with water and some garlic cloves and onions just to add those aromatics to the meat while it smokes. And then also, obviously, the steam from the water helps to even more tenderize the meat that’s being smoked.

And then down below you’ve got the tray and what this will do as you smoke it’s going to catch all your Ashes and then above it what you have is your thing to pull out. It’s a box, your firebox. You can put your coal in there and then as you’re smoking if you’ll likely need to add more throughout your smoke to keep the temperature up just get you a metal thing so you don’t touch that because it’ll be hot and just slide it out a little bit you can add more charcoal briquettes and or wood and again be sure to smoke your wood before you put it in there. I mean to soak your wood rather because you want it to produce a lot of smoke and just burn real slowly.

So it’s just like a cast-iron skillet. It holds the seasoning. And the more they use it, the more seasoned the cast iron becomes. And the more that happens, the fewer problems you have with things sticking to your grill. You’ve got a bin down in the grill that holds all of the charcoal.

And this is something that gives you four different levels that you can adjust the charcoal to so you can go way up close to what you’re cooking like. Say, if you’re trying to get a good sear on a steak, or you can drop it way down there and have that smoke and that heat coming from down below or not.

It’s such a high risk of burning your food. This is removable. You can take this out pretty easily if you want to keep things up here for more of an offset heat.

Your temperature gauge is placed on the top. I will say this, this is one of my kind of complaints about this is the temperature gauge is somewhat unreliable. You do get used to what it’s telling you, but I would say probably best to get yourself a good meat thermometer or something like that. If you’re really interested in knowing what the temperature is on the inside of the meat and getting it just right. This is not going to be the most reliable gauge, but something you go on.

I just kind of like it where I don’t have to worry about it moving without me doing it. And then this allows you to control air here. Most of the time I keep mine unless I’m cooking something like burgers or maybe a steak where I want a lot of airflows and a lot of really high heat. I keep it, for the most part, almost all the way closed. This is removable. You can take this out and put it on a side smoker. I will say this, I had one of those and my first Calgary grill and I really liked it.

This grill does have wheels that let you move it around easily. It’s got a rack on the bottom for storage and so it is decently, easy to move around, although it is a well-put-together heavy material.

If you don’t want to have a grill and a smoker or if you don’t want to get that side pit or however you want to do it, it really does an excellent job and we’ll do a little review. My second one, it’s highly recommended.
